I decided to try a pizza recipe. It was on "YouTube" and the crust was made from ground chicken. Katherine Michelle shared it. Now the ground chicken crust didn't exactly sound very appetizing but I was game. The "crust" was basically just ground chicken with a little cheese. Rolled out the shape you prefer. I baked it for about 20 minutes then added the pizza toppings and baked 10 or 15 more minutes. It looked like pizza. It smelled like pizza. It cut like pizza. What would it taste like? Surprisingly enough it tasted like pizza. There was not a underlying chicken flavor as I expected. Now I am a big bread lover and I am not going to suggest this was better than any pizza dough I have ever tried but it did taste good. And very little carbs!!
I next made a "Keto" chili. This recipe came again from "YouTube" and was shared by "RuledMe". This was one of the easiest chili recipes I have ever made. It has no beans in the soup but I didn't miss them. It had an onion, two bell peppers, a can of diced tomatoes with jalapenos, 1 pound of hot Italian sausage and a pound of ground beef. And of course chili seasonings which in this case included Curry powder, something I wouldn't normally use. This chili actually excited me! It was very good. It got thumbs up all around.
Both of these recipes passed the test as far as I am concerned. I cannot wait to try some other "Keto" recipes. Maybe my glucose numbers will come down to acceptable levels cutting out the carbs.
