An Apple a Day ?

    So Lily and I share some DNA that originates in Sweden and I have some DNA from Norway but Lily does not. Now since those two countries share the same peninsula I am not sure how they determine the difference from Sweden to Norway? But I decided to continue our culinary travels in Norway. I decided to make a Norwegian Apple Cake. I am not sure this is a traditional cake from Norway but the cookbook called it Norwegian.      The cookbook is Taste of Home's Quick Cooking Annual Recipes from 2002. The recipe was submitted by Lucia Johnson of Messina, New York. I purchased this cookbook from an on line auction of my cousin Bev's estate. I wasn't planning on buying any of her cookbooks but the picture of this group looked like it might have some hand written books included. Unfortunately there were not. Go Go Gadgets

     I certainly like my Instant Pot . As I blogged earlier the hard boiled eggs I made in it were the easiest I have ever peeled. And after posting about them I had a couple of people say they liked to make baked potatoes in their pots. My friend Chris said he makes them in his pressure cooker then crisps the outside in the oven. I decided to try that.      My menu was to be Chuck Roast, Baked Potatoes, and a Corn Casserole. Wanting more flavor on the roast I looked for something new. I found a recipe on a site called  "I Heart Eating" for a "Crock Pot Roast" . It was a slow cooker recipe that called for beef broth and 20 cloves of garlic. I pulled out the first gadget, my trusty "Crock Pot" slow cooker. Peeled 20 cloves of garlic, seasoned the beef with salt, pepper and dried time, browned the roast, put a couple cups of beef broth in the slow cooker along with the browned meat and garlic. A NEW GADGET

     Yes, I like to have all of the kitchen gadgets advertised on television. So a few months ago I bought an Instant Pot. My son Ty has one and had indorsed their usage. I was a little skeptical to say the least. I had only been involved in the usage of Ty's once when my spaghetti sauce was not getting done. His wife Samantha pressurized the Instant Pot and finished the sauce for me with good results. I have used old fashioned pressure cookers in the past, with their little gauges on the top rattling around and the steam whistling through the vent while we were canning vegetables from the garden. But this new contraption intimidated me. It was not until a visit with a former co-worker that I was convinced to try it. Tom B. had told me that there was nothing better for making hard boiled eggs than his Instant Pot . He claimed that the egg shell practically fell off the eggs.
